Introduction:
e purpose of this study is to investigate the effects of a newly developed edible coating on the quality and shelf life of fresh-cut fruits. The coating, made from natural ingredients such as seaweed extract and pectin, has been shown to improve the texture, color, and overall appearance of fruits while also enhancing their nutritional value. This study aims to determine the effectiveness of the coating in reducing spoilage rates and extending shelf life by comparing its performance with that of a traditional wax coating.，Methodology:，The study involved two groups of fresh-cut apples, one treated with the new edible coating and the other with a traditional wax coating. The apples were stored under controlled conditions at room temperature for up to four weeks. At regular intervals, visual assessments were conducted to determine changes in the apples' appearance, texture, and overall quality. Additionally, samples were taken for analysis of weight loss, water activity, and microbial growth.，Results:，After four weeks of storage, the apples treated with the new edible coating showed significantly reduced weight loss and increased water activity compared to those treated with the traditional wax coating. Microbial growth was also lower in the apples treated with the new coating. Overall, the apples treated with the new coating had better quality and longer shelf life than those treated with the traditional coating.，Conclusion:，The results of this study suggest that the new edible coating is an effective alternative to traditional wax coatings for preserving fresh-cut fruits. Its ability to improve fruit quality and extend shelf life makes it a promising option for the food
